Inspired by the Italian countryside this beautiful, generously-sized bowl is a perfect addition to your table. Matching pasta bowls are available in a set of four.

Ingredients: Equipment:
  • 8 oz/250g Tagliatelle
  • 1 tbsp/15ml Olive Oil
  • Knob of Butter
  • 8 oz/250g Wild Mushrooms (portobellini or whatever's available)
  • 1 tsp/5ml Crushed Garlic
  • 1 tsp/5ml Dry Mustard
  • 1/2 tsp/2.5ml Sugar
  • 1/2 cup/125ml Dry White Wine
  • 1/2 Cup/125ml Fresh Cream
  • 1 tsp/5ml Corn Flour
  • 1/4 cup/60ml Chopped Fresh Parsley
Seasoning:
  • Pinch Black Pepper
  • Pinch Salt
(Serves 2)


Preparation Time: 10 minutes
Cooking Time: 20 minutes



How To Make Our Delicious Creamy Mushroom Pasta:


Quick Tip

Pasta Cooking Tips:
1. Add a good dose of salt to the water, not just a sprinkle - this results in the tastiest pasta.
2. Add a dash of olive oil to the water - this prevents any sticking.
3. Make sure the water is boiling vigorously before you add the pasta.
4. Drain and rinse the pasta as soon as you remove it from the stove and drizzle with olive oil to prevent sticking.

  • Cook pasta according to the instructions on the packet.

  • Meanwhile slice the mushrooms and fry in a non-stick pan with a knob of butter and a dash of ground black pepper over medium heat.

  • When the mushrooms are beginning to soften add the garlic, mustard, sugar and wine to the pan and stir together.

  • Increase to a high heat and boil to reduce the liquid in the pan by half.

  • Add the cream and warm through.

  • Meanwhile, add a little water to the corn flour and create a thin paste.

  • When the sauce it hot, stir in the corn flour paste to thicken it slightly - add a little at a time and stop adding when the sauce is thick enough for your liking.

  • Stir in the parsley, season with salt and pepper and pour over the prepared pasta.

  • Serve immediately - best eaten piping hot!
