Easy Salmon Quiche Recipe
It's perfect for lunch but with its surprisingly complex flavor this tasty and satisfying easy quiche recipe also works well for a light dinner.

Defrost puff pastry thoroughly.
Preheat oven to 400 deg F/ 200 deg C.
How to peel onions easily:
Cut off both ends and chop onion in half before peeling. The skin will them strip away easily from each half!
Chop the onions roughly and add to a non-stick pan with the butter and olive oil.
Fry gently over a medium heat until onions begin to turn transparent.
Meanwhile, line the sides of a 12 inch pie dish with the puff pastry.
Cover the base of the pastry with one cup of the grated cheese.
When the onions are transparent, add the honey and stir until melted.
Remove onions from the heat and allow to cool.
Blanch the asparagus spears in boiling water for 2-3 minutes or until bright green. Transfer to cold water to stop the cooking process.
Layer the cooled onions in the pie dish over the grated cheese.
Chop the asparagus into 1 inch pieces and layer over the onions.
Chop the smoked salmon into small pieces and layer over the asparagus.
Dot the cream cheese all over the salmon. (Use a teaspoon and push the cream cheese off with your fingers. This bit is a bit messy but it's so worthwhile!)
Add the eggs, milk, cream and seasonings to a medium jug and whisk together.
Pour the whisked mixture into the pie dish. (You can add a little more milk if the dish is not full enough - leave about 1/3 inch between the top of the liquid and the top of the pie dish.)
Sprinkle the other cup of grated cheese over the top and dust with paprika.
Bake in the preheated oven for about 30 minutes until golden brown.
Remove from the oven and allow to stand for a few minutes before serving.
Voila - serve hot or cold!
