Easy Honey Carrots
The honey, sherry and butter in this easy carrot recipe combine to give a delicious, sweet stickiness to this humble vegetable. It's sure to become one of your go-to easy vegetable recipes in no time!
These honey carrots are best baked in a pie dish where you can spread them out nice and evenly.

Preheat your oven to 160 deg C/ 325 deg F
Peel the carrots and slice lengthwise into thin strips.
Arrange in a pie dish - try to keep the carrots in a single layer as far as possible.
Warm the honey by placing the jar or bottle in a pan of hot water before you use it. This makes the honey less sticky and easier to pour.
Pour in the sherry and honey.
Sprinkle with pepper and salt.
Add dots of butter all over the top.
Cover and bake for about 1 hour. (Optional: Remove the cover and bake for a further ten minutes to enhance the stickiness of the sauce.)
Remove from the oven and sprinkle with fresh parsley.

This yummy, easy vegetable recipe is delicious served with any stew or roast but my favorite is to add it as a vegetable side dish to a mild lamb curry.
