The butter, syrup, oats and coconut in this easy oatmeal cookie recipe result in a nutty, sweet and crunchy-chewy delicious treat.

These "Crunchies", as we call them, are a South African favorite - households across the country have been making them for tea parties and cookie jars for generations!



This easy recipe has been adjusted and perfected until it is so easy to make, most South Africans could do it with their eyes closed!

Of all the simple cookie recipes out there this one has to be among the easiest and everyone loves the result!




A good non-stick cookie sheet makes this easy cookie recipe so simple to make. If you don't have one, I recommend you take the time to add one to your collection of baking paraphernalia. I use mine all the time - it's much healthier, cheaper and easier than covering everything with non-stick cooking spray!

Ingredients: Equipment:
  • 9 oz/250g Soft Butter
  • 2 tbsp/30ml Golden Syrup
  • 2 tsp/10ml Bicarbonate of Soda
  • 2 Cups/500ml Rolled Oats
  • 2 Cups/500ml Brown Sugar
  • 2 Cups/500ml All purpose Flour
  • 2 Cups/500ml Desiccated Coconut
(Makes 20-25)


Preparation Time: 15 minutes
Baking Time: 20 Minutes



How To Make Our Easy Oatmeal Cookie Recipe:


  • Preheat oven to 350 deg F/ 180 deg C.

  • Pour the flour, oats, sugar and coconut into a large mixing bowl and stir together. Set aside.

  • Add the butter and syrup to a non-stick saucepan and melt the butter over a medium heat.

  • When the butter is melted stir in the bicarbonate of soda.

  • Make a well in the center of the dry ingredients in the mixing bowl and pour in the butter.

  • Stir everything together until the dry ingredients are well mixed with the wet.

  • Pour the mixture into a baking tray and press down and into the corners using the back of a wooden spoon.

  • Make sure the thickness of the dough is fairly even across the tray.

  • Bake at 180 deg C/ 350 deg F for approximately 20 minutes or until the surface is just beginning to brown.

  • Remove the tray from the oven and cut into squares while still hot. (Don't worry that the cookies are very soft - they will harden on cooling.)

  • When the cookies are cool turn out and fill up the cookie jar!

Jazz it up!

If you really pushed me to make a suggestion I would say that you could include a cup of cranberries or seedless raisins with the dry ingredients in this simple cookie recipe.

However, to be honest, this recipe is perfect just as it is - this is one easy recipe that I never mess with!
