Easy Beef Stroganoff Recipe

Peel onions, cut in half and chop finely.
Add onions and half the butter to non-stick pan and fry on medium heat, stirring occasionally, until onions are turning transparent and just beginning to soften. (About 5 minutes.)
Add honey and cook on a medium heat for a further 3 minutes to caramelize and sweeten the onions.
How to get the most flavor from your mushrooms:
Wipe your mushrooms with a sheet of kitchen towel or a damp cloth instead of washing them under water.
Add the rest of the butter, pepper, salt, paprika, garlic, mustard and mushrooms and continue to cook on a medium heat until the mushrooms soften. (About 5 minutes.)
Stir in the flour and cook on low heat for 2 minutes.
Increase to a high heat and add the brandy. Cook for 1-2 minutes to burn off the alcohol and to reduce the liquid.
Reduce heat and pour in the cream. Simmer on a low heat until warmed through and slightly thickened. (About 5 minutes)
Meanwhile slice the beef into very thin strips against the grain of the meat.
Add the beef to the warm sauce with the parsley and stir through to warm.
Serve immediately.
