This easy beef stroganoff recipe made with beef, mushrooms, sour cream, brandy, garlic and mustard is my no fuss, full of flavor version of an old favorite.

Because the meat is added last, this quick beef stroganoff recipe is full flavor and the meat is juicy and tender.

Creamy, tangy and delicious, you can't go wrong with this easy recipe whether you're entertaining or cooking for the family - everyone loves it!

This easy recipe calls for a large nonstick frying pan. If you don't have a good, solid one the Swiss Diamond 11-inch pan is a good buy. I use my nonstick pan all the time in my kitchen - I would be lost without it!

Ingredients: Equipment:
  • 2 Medium Onions
  • 1 lb/ 500g Beef Fillet/Soft Shin
  • 2 oz/50g Butter
  • 1 tsp/5ml Honey
  • 2 tsp/10ml Crushed Garlic
  • 1 tsp/5ml Hot Mustard
  • 8oz/250g Button Mushrooms - sliced
  • 8oz/250g Portobellini Mushrooms - sliced
  • 2 tbsp/30ml Flour
  • 1/2 cup/125ml Brandy
  • 1 1/2 cup/375ml Sour Cream
Seasoning:
  • Pinch Black Pepper
  • Pinch Salt
  • 1 tsp/5ml Paprika
  • Handful of Chopped Fresh Parsley
  • (Serves 4)


Preparation Time: 10 minutes
Cooking Time: 20 minutes



How To Make Our Easy Beef Stroganoff Recipe:


  • Peel onions, cut in half and chop finely.

  • Add onions and half the butter to non-stick pan and fry on medium heat, stirring occasionally, until onions are turning transparent and just beginning to soften. (About 5 minutes.)

  • Add honey and cook on a medium heat for a further 3 minutes to caramelize and sweeten the onions.

  • Quick Tip

    How to get the most flavor from your mushrooms:
    Wipe your mushrooms with a sheet of kitchen towel or a damp cloth instead of washing them under water.

  • Add the rest of the butter, pepper, salt, paprika, garlic, mustard and mushrooms and continue to cook on a medium heat until the mushrooms soften. (About 5 minutes.)

  • Stir in the flour and cook on low heat for 2 minutes.

  • Increase to a high heat and add the brandy. Cook for 1-2 minutes to burn off the alcohol and to reduce the liquid.

  • Reduce heat and pour in the cream. Simmer on a low heat until warmed through and slightly thickened. (About 5 minutes)

  • Meanwhile slice the beef into very thin strips against the grain of the meat.

  • Add the beef to the warm sauce with the parsley and stir through to warm.

  • Serve immediately.

Jazz it up! Healthy Options! Economize!
  • Replace the brandy with white wine for a tangier version.
  • Use olive oil instead of butter.
  • Reduce the amount of cream and replace with milk.
  • Replace the portobellini mushrooms with common button mushrooms or just leave them out.
  • Reduce the quantity of beef.
