Easy Beef Recipe with Mushrooms
This is an easy recipe that your hungry family will rush to come home to. It has a long list of ingredients but don't let that put you off.
Just throw them all in the pot, get it on the stove early in the afternoon and by the time they arrive your home will be filled with the rich aromas of simmering beef, mushrooms, carrots and brandy - mouthwatering!
Tip: To make this easy beef recipe even easier, invest in a large non-stick pot that you can use on the hob and in the oven.

How to peel onions easily:
Cut off both ends and chop onion in half before peeling. The skin will them strip away easily from each half!
Roughly dice the onions and add with two teaspoons of olive oil to a large non-stick pot and fry on medium heat, stirring occasionally, until onions are turning transparent and just beginning to brown. (About 5 minutes.)
Add garlic, honey, flour, a pinch of salt and pepper, half tsp mixed herbs and a tsp of paprika. Fry for two minutes on low heat.
Stir in the tomato paste, brandy and red wine.
Cook on high for one minute to boil off the alcohol then return to medium heat.
Meanwhile, cut up the beef into bite size pieces and lightly coat in paprika. (Keep the bones to one side.)
Add the meat and two tsp olive oil to a separate non-stick pan and fry quickly on a high heat until browned.
Add the browned beef, beef bones and smoked beef to the onions and stir together.
Add 1.5 liters of beef stock, bay leaf, beef bones, carrots and mushrooms.
Simmer in the pot for an hour. (Alternatively bake in the oven on 180 deg C/ 350 deg F for an hour.)
Add green beans and the juice of half a lemon and cook for a further 30 minutes.
Thicken with corn flour if required.
Season with salt and pepper to taste and serve hot.
