Delicious Cinnamon Pinwheel Cookies
You'll have to go a long way to find an easy cookie recipe that's simpler than this one - it's so easy these delicious sugar cookies almost make themselves.
These are a favorite quick and simple teatime treat in my family.
They're especially good straight from the oven, which makes them a big hit with the kids - they hate waiting for things to cool!
A good non-stick cookie sheet makes this easy cookie recipe so simple to make. If you don't have one, I recommend you take the time to add one to your collection of baking paraphernalia. I use mine all the time - it's much healthier, cheaper and easier than covering everything with non-stick cooking spray!

Preheat oven to 425 deg F/ 220 deg C.
Mix ground cinnamon and castor sugar together in a small bowl.
Roll out pastry on a lightly floured surface until roughly 8 inches/20cm square.
Sprinkle half of the sugar mixture all over the surface of the pastry.
Roll the pastry again until roughly 10 inches/ 25cm square so that the sugar is pressed into the dough.
Brush all over with beaten egg.
Sprinkle the rest of the sugar across the pastry.
Roll the pastry into a loose log. Brush the back edge with beaten egg and stick to the log.
Use a sharp knife to cut the log into 1/2 inch/ 1cm slices.
Keeping your Cinnamon Pinwheel Cookies fresh:
Store your cookies in an airtight container. If they become soft, recrisp them for a minute or two in the oven.
Transfer Cinnamon pinwheel cookies to the baking sheet.
Brush the top of each cookie with beaten egg.
Bake for 10-12 minutes at 425 deg F/ 220 deg C. Cookies should be golden and crisp when cooked.
Sprinkle the cookies with a little extra castor sugar.
Allow to cool on a wire rack. Best eaten immediately!
