A simple but delicious, easy asparagus recipe with almonds, lemon and butter. So easy to make but elegant enough to serve at a dinner party, this is one of my favorite vegetable side dish recipes.

There is something about the combination of almonds and lemon in this asparagus recipe that brings out the delicate flavor of the asparagus perfectly.


The culinary treat created by the meeting of crunchy nuts with soft asparagus goes especially well with chicken or fish, and guess what? Even my kids love this asparagus recipe!



This easy vegetable recipe is so pretty it's a pity not to serve it in the middle of the table on an elegant platter, especially if you have guests. I find that white is the best color to show off the bright green of the asparagus to its best advantage.

Ingredients: Equipment:
  • 15-20 Asparagus Spears
  • 1/4 cup/60ml Butter
  • Dash of Olive Oil
  • 1/4 cup/60ml Slivered Almonds
  • 1 tbsp/15ml Fresh lemon Juice
  • 1/2 tsp Salt
  • Freshly Ground Black Pepper
(Serves 4)


Preparation Time: 5 minutes
Cooking Time: 10 minutes



How To Make Our Easy Asparagus Recipe with Almonds and Lemon:


    Quick Tip

    Make sure you rinse the asparagus really well before cooking especially the spear tips as they tend to be gritty. If you have time it's a good idea to soak the asparagus in clean cold water for 5-10 minutes.

  • Clean the asparagus spears.

  • Bring a pot of large salted water to the boil or set up your steamer.

  • Cook the asparagus in the water or steamer until the color turns bright green. (2-3 minutes in boiling water, 6-8 minutes in a steamer.)

  • Rinse the asparagus in cold water to prevent further cooking, drain and set aside.

  • In a small pan heat the butter over a medium heat and add a dash of oil to prevent burning.

  • Add the almonds and cook for about three minutes until just beginning to release their fragrance but not yet browning.

  • Add the lemon juice, salt and asparagus and cook for a further minute or two to let the almonds brown slightly and to heat the asparagus through.

  • Season with freshly ground black pepper.

  • Serve immediately on a heated serving platter.

  • Try replacing the almonds with pine nuts for a flavor twist.
  • Use more olive oil and leave out the butter. (Use a high quality oil for the best flavor.)
