Easy Roasted Brussel Sprouts
I'll be the first to admit that brussel sprouts have never been my favorite easy vegetable side dish. I've never quite been able to get used to the slightly bitter flavor...
Until now that is...
And that's because it's never occurred to me to roast them before. I don't know why - I've roasted virtually every other vegetable at one time or another, but for some reason the humble brussel has always been relegated to the steamer.
Well, not anymore. It turns out that brussel sprouts make a delicious, nutty roasted vegetable recipe with a lovely crispy outside texture - I am converted!

This roasted vegetable recipe is best baked in a pie dish where you can spread them out nice and evenly and toss them around a bit during cooking.

Preheat your oven to 220 deg C/ 425 deg F
Slice the bottoms off the brussels and remove any manky outer leaves.
Rinse and arrange in a pie dish - a single layer is best for roasting.
Pour in the olive oil.
Sprinkle with pepper and salt.
Toss to make sure the brussels are well coated.
Cover and bake for about 20 minutes.
Remove from the oven stir around to coat with olive oil again.
Remove the cover and bake for a further ten minutes until beginning to brown and crisp on the edges.
Serve warm.
